  1. Dry roast the cumin seeds, coriander seeds, cardamom pods, peppercorns, cinnamon sticks, and cloves in a pan over medium heat until fragrant.
  2. Remove from heat and let cool.
  3. Once cooled, add the roasted spices along with bay leaves and nutmeg to a spice grinder or a blender.
  4. Blend until you get a fine powder.
  5. Store in an airtight container for up to 6 months.

Note: You can adjust the proportions of spices according to your preference.
